The Texas High Plains is the largest wine appellation in the state. More than 1,000 acres are under vine. Cabernet Sauvignon and Chardonnay vie for the most acreage, with Sauvignon Blanc and Chenin Blanc a close second. The region is 3,400 feet above sea level with long, hot, dry summers creating proper sugar and acid levels in the grape. A better fruit is produced under the slightly stressful condition of an 18-inch annual rainfall in the region.Lubbock skies are as big as Texas.
